Cookie Dough Brownies

Fudgy brownies topped with edible cookie dough–what could be better? Cookie Dough Brownies are delicious and gooey and easy to make!

Cookie Dough Brownies

A quick glance at Pinterest will show you that baked goods pile high with edible cookie dough are having a MOMENT. And as one of those daring people who loves cookie dough in all of it’s forms (as in fully egged or not-le gasp), I fully support this movement.

In fact, these cookie dough brownies are basically the OG of cookie dough desserts. The recipe originally came from one of my mom’s Taste of Home magazines, and it made my sisters and I somewhat famous and quite popular at church potlucks, picnics with friends, etc. Everyone loved them, and we were only too happy to feed the masses with these babies. So consider this your crash course on how to win friends and influence people.

How to Make Cookie Dough Brownies

  • Start by making your brownies. You can use a recipe from scratch, but a box mix will make your life even easier! Make sure your brownies are cool before putting the cookie dough on top.
  • Preheat the oven to 350°F and spread a cup of all-purpose flour on a baking sheet.
  • While the oven is preheating, mix together a stick of soft butter and the sugars until they’re well combined and creamy.
  • Put the flour in the oven and let it cook for about 5 minutes. Make sure to watch it so it doesn’t burn!
  • Stir the flour into the butter and sugar –it will be a crumbly mixture.
  • Add the milk and vanilla extract and stir until you have a smooth cookie dough. Stir in 3/4 of the chocolate chips.
  • Place small scoops of cookie dough all over the top of the brownies, then use a rubber spatula or the back of a spoon to spread it around. Sprinkle the remaining 1/4 cup of chocolate chips over the top.
  • Chill until the cookie dough is cool enough to cut (about an hour) then serve!

Recipe Notes

  • You can absolutely mix your cookie dough by hand, but it’ll be easier with a hand mixer! I use this one from Kitchenaid and give it five stars, two thumbs up, etc.
  • Don’t plop all of the dough on top of the brownies at once, or it’ll tear them up as you spread it out. Instead, place little spoonfuls of the edible cookie dough across the top of the brownies, then spread them with the back of a spoon or a rubber spatula.
  • These cookie dough brownies have the best texture and flavor when they’re cold. I also recommend storing them in the refrigerator since there is milk in the cookie dough.
  • This is a simple recipe and you can use whatever pan you have on hand to make it. I use this one with a removable bottom which makes it super easy to remove and cut them.

Is Eggless Cookie Dough Safe to Eat?

Yes! This recipe is completely safe to eat because not only do you use milk instead of eggs, the flour is also cooked. This kills any bacteria that can hide out in the flour and makes it completely safe to eat. Not that we did that back in the day. We were some kind of hard core, huh?
