Smashed Fingerling Potatoes with Garlic and Rosemary

Crisp roasted smashed  potatoes are topped with garlic butter and rosemary, making for a wholesome, filling side dish.


-Fingerling Potatoes -Olive Oil -Salt -Pepper -Garlic -Butter -Rosemary

Boiling the Potatoes

Place the potatoes in a pot and cover them with cold water.

Boil until the potatoes are fork tender.

Toss the boiled potatoes in olive oil.

Smash the potatoes with a fork or the bottom of a glass.

Season then roast the potatoes for 30-40 minutes, or until they're crispy.

Melt butter and saute minced garlic. Add in the chopped rosemary.

Spread the melted garlic butter over the smashed potatoes.

Enjoy the potatoes while still hot.
